Because the process is fast, they can meet the stated weights on their supplement panels cheaply, but they are harvesting a "seedling" before there is ever fruit.

The Starch Lie (Alpha-Glucans vs. Beta-Glucans)
The biggest secret in the industry is how compounds in "Mushroom Powder" are measured. Many brands boast high "Polysaccharide" counts on their labels, leading consumers to believe they are getting a potent product.
The reality is a molecular bait-and-switch:
- Alpha-Glucans (the polysaccharide filler): Mycelium-on-grain (MOG) products are inseparable from their growing medium. When the mycelium is ground up, so is the rice or oats it grew on. Laboratory testing using the McCleary Method shows these products are often 30–70% Alpha-glucans—which is just grain starch.
- Beta-Glucans (the polysaccharides you want): The actual polysaccharides that support health immune function are fungal Beta-glucans. Pure, mature fruiting bodies contain high levels of Beta-glucans and virtually zero starchy Alpha glucans.
